“Diet For A Small Planet” has always been one of my favorite cookbooks. First published in 1971 by Francis Moore Lappe, it inspired me to stop eating red meat—not just for my health but for the health of the planet. Perhaps, in the future, cows, like windmills, will be lovely remnants (or ruminants) of more primitive times.
